Mom's Mysterious Potato Soup

The "mystery" is the ingredients you don't tell the kids are in it. As far as you're concerned, it's just potato soup.

5-6 medium-large yellow potatoes, cubed with skins on
1 head califlower, flouretted (is that a word?)
1 medium-large yellow onion, cubed
1 box organic free-range chicken broth
(I would have included some carrots, but didn't have any on hand).

Throw it all into a large pot. Simmer til veggies are all very tender. Whir it around in a food processor until smooth. Season to taste (I used salt, pepper, paprika and garlic powder.

Very nice winter soup.

  1. I love blenderizing soups...it gives it a creamy texture without adding the fat! Sounds great Mo! YUMMY. What is the carb count or factor on it?

  3. Leave it to a D-Mom to ask about carb counts! ;) Mashed potatoes are about 25-30 g per cup, and I used equal parts cauliflower which is very low. Soooo....guestimate about 15-20 g per cup, and plan to adjust at the next meal/snack. The part of home-cooked meals that sucks is trying to figure out the carb counts!

  4. You'd have to not tell me that you put cauliflower in the potato soup! LMAO! Sound like a good, rich recipe, though. I'm not terribly fond of potato soup, which is odd since I'm incredibly fond of potatos!

  5. Sounds yummy! Jason used to sneak veggies (and flax seed) into the girls' breakfast fruit smoothies and he got away with it for quite a while. Until one day the strawberry smoothie had an odd greenish tint. Olivia opened the recycling bin and found the spinach container. Busted!

    MO - give any more thought to that vermicomposting idea? Would love to have someone experiment (and/or commiserate) with!
